Winter Wonderland Cupcakes & Sugared Pecans #ClearAmerican

As promised the holiday baking has commenced!  The first thing I made were Winder Wonderland Cupcakes and I got to use my new cake stand!  I also made Sugared Pecans and had Christine make Dipped Peanut Butter Filled Ritz Crackers.
Last summer, we tested 4 different flavors of Clear American Sparkling Flavored Water to see which one was our favorite and we have been buying Clear American from Walmart ever since.  So, when I needed to get some holiday baking done, I picked up a 2 liter bottle of Black Cherry Clear American to speed things up and make my recipe healthier! I used Clear American Sparkling Water instead of eggs and oil in my recipe.

Ingredients:

White Cake Mix
1 1/3 cups Clear American Sparkling Water
I combined the cake mix and the Clear American Sparkling Water.  I started mixing it with a wooden spoon but switched to my hand mixer to finish.
I divided the batter between 2 bowls and added blue food coloring to one of the bowls.
I lined the cupcake pans with silver liners and layered the batter in the liners: white, blue, white.  I carefully spread each layer out after adding it.

Then, following the instructions on the box, I baked them at 350°F for 21-24 minutes.
After letting the cupcakes cool, I frosted them with butter cream frosting.  Then, I used Betty Crocker decorating spray to lightly color them blue and sprinkled with Cake Mate Shimmer Silver Cupcake Gems.
They turned out just lovely!  Since I purchased a 2 liter of Clear American, I had enough left to make something else so I decided to make Sugared Pecans.
Ingredients:
1 cup pecans
1/2 cup Clear American Sparkling Water
8 packets of Truvia
1/2 tsp cinnamon extract
pinch of salt

These pecans can be made using 1/4 cup granulated sugar and 1/2 tsp ground cinnamon in place of the Truvia and cinnamon extract!

I combined all of the ingredients in a sauce pan and cooked it over medium heat until the water was gone.
I poured the pecans on a buttered cookie sheet and immediately separated the pecans with 2 forks.

*Update*

To answer a couple of questions about flavor…I did not notice the Black Cherry flavor in the cupcakes but when I sampled the cake batter, I did notice a hint of flavor.  The pecans did have a bit more zing in them but that might have been the Truvia…either way they are delicious!

    Does the Clear American flavor the cupcakes at all? I used it in my Pina Colada Cake and did notice some extra coconut flavor, but i haven’t tried it with just a white cake mix before.

  5. The blue color in those cupcakes is beautiful! Almost, too pretty to eat. I’ve never made sugared pecans but always love the smell of them when I go to one of our local outlets where a vendor makes them.
