

For the entire recipe, you can download the cookbook here. The recipe calls for grated potatoes, grated onion, a slightly beaten egg, salt and pepper. I was short on time so instead of grating baking potatoes, I bought a bag of already shredded potatoes from the refrigerator section of the store, near the Country Crock spread. After mixing the ingredients, I formed oval shaped brains on a baking sheet. I was supposed to use parchment paper but didn’t have any so I greased the sheet with Country Crock spread. I love that this recipe is so simple to make!

To make the crevice down the center of the brain, I used a spatula. I sort of held the hashbrowns together while pressing the spatula in the center.

I brushed the tops and sides of the hashbrains with melted Country Crock spread. Then, I put them in a preheated oven. While they were cooking, I stated making the rest of the meal.

My hashbrains didn’t turn out nearly as cute as the ones pictured in the cookbook but they were delicious! I served them with scrambled eggs and bacon. Everyone was home so they all got to try the hashbrains. They were a hit with the whole family! And what did my son Zack who doesn’t like veggies think? He ate 2 hashbrains and LOVED them! My husband said they were delicious and wanted a second one but Zack beat him to it. Christine ate the hashbrains with ketchup but the rest of us ate them plain. The potatoes tasted great with Country Crock spread on them so there was no reason to hide them. I know my family is going to be requesting that I make these again!
