Getting Back To Healthy Eating

With the summer ending, I’ve realized that I need to get back to eating better! Some of my healthy eating habits were left by the wayside. I can’t even count the gallons of ice cream and frozen yogurt we’ve consumed this summer! I am starting with eating a healthy, filling lunch.

Over the weekend, I did some shopping with Vanessa. We found her some new school clothes from the mall and bought the rest of the school supplies my kids need. Our last stop was Sam’s Club. I love buying items in bulk. It saves me time and money! You can check out my entire shopping trip in my Google+ Album.
I found a 6 pack of Lean Cuisine meals at Sam’s Club for $11.25 making each meal only $1.88. They will be perfect for my lunches and I have a sneaking suspicion that Christine will want to eat them too. She doesn’t have to be in class every day so when she is home working on her online classes, we can have lunch together!
There package came with 3 flavors: Ginger Garlic Stir Fry with Chicken, Chicken Teriyaki Stir Fry and Sesame Chicken. I had a hard time deciding which one to start with.
I decided to try the Lean Cuisine Simple Favorites Chicken Teriyaki Stir Fry. I paired the stir fry with an Asian chopped salad that I purchased from Sam’s Club, as well.
The meal contains white meat chicken, long grain white rice, snap peas, carrots and red peppers. It has 1 gram of fat, 220 calories, 3 grams of fiber and 12 grams of protein. To make the meal, I only had to cut a slit in the plastic cover and microwave. I made the salad while the stir fry was in the microwave.
I really enjoyed my lunch and look forward to trying the rest of my Lean Cuisine meals.

I’ve also starting trying to eat breakfast every day. I am not hungry when I wake up in the morning so I start off with coffee and get on with my day. Often I find that it is suddenly time for lunch and I haven’t eaten breakfast. But I’ve heard that not eating breakfast can cause a person to consume more food the rest of the day. So, I am trying to start the day with a healthy breakfast and hopefully it will help with the rest of the day’s eating!

  1. Some of those frozen meals are good to have on hand Tonia. With you guys coming into fall, individual serves of soup frozen are good to have as well. That’s what I had most days for lunch. I tend to eat better in summer I think. Lots of salads etc. I’m sitting here freezing tonight. I thought we were finished with the cold weather!
