Your Cinnamon Streusel Coffee Cake Looks A Lot Like Meat Cake

What IS that? MEAT CAKE?

I recently had the opportunity to visit with some friends from out of town at my parents house. I wanted to bring something that we could enjoy with a cup of coffee and I was craving cinnamon streusel coffee cake. When I looked in my cupboard for ingredients, I only had 2 cups of flour…grrr! But I had two white cake mixes! Could I make coffee cake with a cake mix? I decided to give it try. I used the cake mix for the base of the coffee cake and the flour to make the streusel. Mixing everything together went well and it smelled heavenly while baking…and then I pulled it out of the oven! My cake mix cinnamon streusel coffee cake did not look like a coffee cake at all. Brian, Zack and Vanessa came into the kitchen to check it out and we all started laughing. I thought it looked like lasagna. Vanessa said that it looked like egg bake. Brian and Zack asked if there was meat in the cake because the streusel looked like ground hamburger. So, my cinnamon streusel coffee cake was given the name meat cake.

Now, I had a dilemma: do I bring the meat cake cinnamon streusel coffee cake with to my parent’s house to share with everyone or arrive empty handed because there wasn’t time to make anything else? Before I could serve the cake to anyone, we had to try it to make sure it tasted better than it looked. Sure enough, it tasted great but I was still feeling unsure. So, I mixed up a little glaze and drizzled that on top of the slices. The frosting glaze made it look more like coffee cake and it was time to make a decision. Still laughing, we decided to bring it with us.

To my surprise, everyone loved the cinnamon streusel coffee cake and even went back for seconds. My aunt said she used to make coffee cake all the time but hadn’t for years. She said she would love to have my recipe. So, I had to tell them the story about the meat cake and after I was done she said that she still wanted the recipe because the coffee cake was so moist and delicious!

Cake Mix BatterMix together 5 cups of cake mix (use 2 boxes of cake mix and you will have about 1 cup leftover), baking powder, milk, sour cream and eggs. The resulting batter will be very thick. Spread the batter into a greased 9×13 inch pan.

Streusel In BowlFor the streusel crumbs, mix together brown sugar, cinnamon, flour, salt and butter.

Cinnamon StreuselUse a pastry blender or two knives to cut in butter mixture resembles small clumps.

Streusel In PanCrumble the cinnamon streusel evenly over the cake batter in the pan. Yes, it does look somewhat like ground hamburger!

Baked In PanJust looking at this picture makes me laugh again!! This is how the delicious smelling cinnamon streusel coffee cake looked when I pulled it out of the oven! Meat cake, anyone?

Cinnamon Coffee Cake FrostedMix together powdered sugar and heavy cream. Cut the coffee cake into squares and drizzle with glaze letting it drip down the sides (disguising the fact that it looks like meat cake)!

Cinnamon Streusel Coffee Cake
 
Ingredients
  • 5 cups white cake mix (measured from 2 boxes of cake mix)
  • 1 teaspoons baking powder
  • 1 cup milk
  • ¼ cup sour cream
  • 2 eggs
  • 1½ cups brown sugar
  • 1¾ cups flour
  • 2 tablespoons cinnamon
  • ¼ teaspoon salt
  • 1 cup (2 sticks) butter
  • 1 cup powdered sugar
  • 2 tablespoons heavy cream
Instructions
  1. Preheat oven to 350°F.
  2. Place cake mix, baking powder, milk, sour cream and eggs in large mixing bowl. Mix on low speed for 30 seconds and on medium for 1 minute.
  3. Spread batter into a greased 9x13 inch pan.
  4. For streusel topping, mix together brown sugar, flour, cinnamon and salt in a small bowl.
  5. Cut in butter until mixture resembles small crumbles.
  6. Spread crumbles evenly over cake batter.
  7. Bake at 350°F for 40-50 minutes until a toothpick inserted in the center comes out clean.
  8. For the glaze, mix together powdered sugar and heavy cream.
  9. Cut cooled cake into slices and drizzle with glaze allowing it to drip down the sides.
