I’m always looking for easy lunch ideas. Recently we’ve either been traveling, running errands or visiting the lake. Meals have been fast food or peanut butter and jelly sandwiches. The kids started school this week so all of that has to come to an end. The kids will still be eating PB& J but I am looking for something that is easy to make, is more filling and has lots of flavor like a Chipotle Chicken & Rice Burrito!
I picked up some Michelina’s meals. What I love about these frozen meals is that I can add my own ingredients to make it my own. When I saw the Chipotle Chicken and Rice flavor of Michelina’s Lean Gourmet® at Walmart, I knew it would be the perfect filling for burritos. It has a chipotle cream sauce with rice, peppers, white chicken, black beans and corn. The two ingredients that would take me the longest to make, the chicken and the rice, are already cooked for me so the burritos were really easy to make.
I was challenged to “Make It Your Michelina’s”. So, I bought premade guacamole, Rotel canned diced tomatoes, black beans, sour cream, shredded cheese, shredded lettuce and cilantro. All I had to do for prep was rinse and chop the cilantro and open the cans and containers.
First, heat the frozen meal in the microwave according to the instructions on the package.
Next, warm the flour tortilla on a microwavable plate. Spoon the chicken and rice into the center of the tortilla.
Top with beans, chopped tomatoes, shredded lettuce, shredded cheese, guacamole, cilantro and sour cream. Roll up the burrito and enjoy! This meal was inexpensive and delicious. - 1 Michelina's Lean Gourmet® Chipotle Chicken and Rice Frozen Dinner
- 1 Flour Tortilla
- 1 Tablespoon Black Beans
- 1 Tablespoon Chopped Tomatoes
- ½ Cup Shredded Lettuce
- 1 Tablespoon Shredded Cheese
- 1 Tablespoon Guacamole
- 1 Teaspoon Sour Cream
- Microwave for 2½ minutes, open the lid to stir and then cook for an additional minute.
- Warm flour tortilla for 15 second in the microwave.
- Spoon chicken and rice mixture into the center of the flour tortilla.
- Top with black beans, tomatoes, lettuce, cheese, guacamole and sour cream.
- Roll the up the burrito and enjoy!
