It’s the last day of January and that means we are one month closer to the return of spring! Speaking of spring though, we had the most gorgeous weather this weekend. The highs were in the low 40s which is almost double the average high this time of the year. The guys are disappointed because they want to play more hockey at the outdoor rinks but the warm weather melted the rinks. It’s supposed to get really cold again at the end of the week so maybe the skating season isn’t over yet. I hope you have a great week filled with delicious food!

I’ve joined several of my food blogging buddies to share an easy meal plan for this week. I hope this menu will take some of the stress out of your week and that you will find some great new blogs to follow. Below you will find the easy meal plan with six fantastic main dishes, a breakfast recipe and two delicious desserts that your family will love. Plus, we’ve designated Friday as date night and the kitchen is closed to give you a break, but feel free to change the menu to best fit your family’s schedule.
