No Churn Gingerbread PEEPS Ice Cream

My son told me recently that he is getting a little tired of all the pumpkin and apple recipes and is ready for something new. I told him not to worry because I would start making peppermint, eggnog and gingerbread recipes soon. Now, it’s December 1 (how did that happen?) and here is my first gingerbread recipe this holiday season. Today’s recipe for No Churn Gingerbread Ice Cream is a fun way to add a favorite Christmas flavor to a classic dessert.

PEEPS Marshmallow Gingerbread Men and PEEPS Chocolate Mousse Marshmallow Reindeer

To make this gingerbread ice cream for my “24 Days of PEEPSONALITY” recipe, I used PEEPS® Gingerbread-Flavored Marshmallow Gingerbread Men! We are enjoying two of the holiday flavors: PEEPS® Chocolate Mousse-Flavored Marshmallow Reindeer and PEEPS® Gingerbread-Flavored Marshmallow Gingerbread Men. Either one of these flavors could be used to make different flavors of ice cream.

PEEPS Gingerbread Men

First you want to prepare the main part of the ice cream with heavy cream, vanilla, ground ginger, ground cinnamon and sweetened condensed milk. Once that mixture has been prepared and spread in a 9-inch loaf pan, melt the butter and PEEPS® Gingerbread-Flavored Marshmallow Gingerbread Men in the microwave.

Marshmallow Gingerbread Swirled Ice Cream

Allow the melted PEEPS® to cool for 2-3 minutes and then use a greased fork or spatula to drizzle over the ice cream in the loaf pan. Use a knife to swirl the marshmallow through the loaf pan.

No Churn Gingerbread Ice Cream Recipe

Cover tightly with plastic wrap and then foil. Freeze overnight and for up to 7 days.

Homemade Gingerbread Ice Cream Recipe

Scoop the No Churn Gingerbread Ice Cream into bowls and add PEEPS® Gingerbread-Flavored Marshmallow Gingerbread Men to the bowls. Let your kids help you make this delicious No Churn Gingerbread Ice Cream and they will be delighted to have made their own ice cream. It’s smooth, creamy and perfect for the holidays.

No Churn Gingerbread Ice Cream

Ingredients
  • 1-pint heavy cream
  • ½ tsp vanilla extract
  • ¼ tsp ground ginger
  • ¼ tsp ground cinnamon
  • 14 ounce can sweetened condensed milk
  • 1 package of 6 PEEPS® Gingerbread-Flavored Marshmallow Gingerbread Men
  • 1 tbsp butter
Instructions
  1. Beat heavy cream in a chilled bowl until thickened.
  2. Add vanilla extract, ground ginger and ground cinnamon. Beat until stiff peaks form.
  3. Fold in sweetened condensed milk until combined. Scrap into a 9-inch loaf pan.
  4. Melt butter in a medium-sized, microwave-safe bowl. Add the PEEPS® and stir to coat with the melted butter. Microwave on high for 60 seconds. Stir until smooth.
  5. Allow the melted PEEPS® to cool for 2-3 minutes and then use a greased fork or spatula to drizzle over the ice cream in the loaf pan. Use a knife to swirl the marshmallow through the loaf pan.
  6. Cover tightly with plastic wrap and then foil. Freeze overnight and for up to 7 days.

    I am always a big fan of the vanilla crème and strawberry crème flavored peeps but really I love all peeps.

    To be honest, I have only ever tried the original peeps. Those are the ones I like. Guess I don’t venture away from what I know is a trusty goodness.

    Okay, I was going to say the little chocolate truffle-y things (I’ve only seen them at the Peeps store), but then I clicked over and saw the blue raspberry marshmallow dino eggs and I want those!

    I like the chocolate dipped varieties. All of these Peeps varieties must be recent. I don’t recall seeing many of those in the store until recently. They had some really cool Halloween themed ones this year too.
