In the spirit of holiday giving, I offered to do some baking for my husband to deliver to some of his favorite clients, his team and his co-workers. Since I am a food blogger, it was a great idea…the only problem is that I forgot that my husband started his Christmas vacation on Friday, so I only had one day to make all of the goodies. After doing a little brainstorming of what holiday cookies to make, I decided to do some multitasking by making a slow cooker dessert. These crock pot peanut clusters with chocolate and butterscotch were cooking, I was able to work on other treats. I also made Peanut Butter Blossoms, Hot Chocolate Cookie Cups, Peppermint Patties, Crispy Peanut Butter Bites and Hershey’s Pretzel Bites.

You know how most kids spend their candy money on gum and candy bars? When I was a kid, I spent my candy money on those things as well, but unlike other kids, I also bought pink wintergreen lozenges, Sen-Sen black licorice mints, sponge candy and chocolate turtles. I would buy the boxes of chocolate turtles when they would go on sale during the holiday season. They are still one of my favorites and sometimes I buy them from chocolate shops. So with that in mind, I decided to make Slow Cooker Chocolate Turtle Bread Pudding. It is a warm, comforting dessert with chocolate, caramel and pecans. Of course, it tastes even better when topped with a scoop of salted caramel ice cream!

Last spring, Christine and I met with one of my friends at a soup restaurant for dinner. One of the soups that they had on the menu was chicken pot pie soup. I had never heard of it, but since we love chicken pot pie, we decided to try the soupand were disappointed. We all agreed that a homemade version would be much better. With the cooler temps we’ve been having, it was the perfect time to try making it. Last week, my sister’s friend brought 12 dozen ears of sweet corn back from South Dakota! He dropped it all off at my mom and dad’s house and my mom decided to host an impromptu corn roast. The main food was the fresh sweet corn, of course but everyone brought other foods to go along with it. My mom told me about the corn roast in the morning, so I put some boneless ribs in my Crock Pot and they were ready by the time I left for her house. These slow cooker barbecue ribs are very easy to make and the result is fork tender, delicious BBQ ribs!

For some reason, when I think about using my Crock Pot, I think about it in the cold months filled with soups, stews and pot roast. But I’ve come to realize that using a slow cooker in the summer makes a lot of sense! First of all, I don’t have to turn my oven on and heat up the house. On a day like today, when the high was 90 degrees and the humidity was 75, the air conditioner is working hard enough. I could always go fire up the grill, but I really am enjoying the cool air inside the house. Another great reason is that summer is such a busy time. I spend my days running errands, bringing my kids here and there, meeting friends at the park and trying to prepare blog posts in between. So, I love it when I remember to put dinner in the Crock Pot and voilait is ready when we want to eat! Last week, I made honey sesame chicken in my slow cooker and loved it.

College hasn’t started again for Christine so she has been helping Vanessa and Zack. One of the things they did was throw boiling water into the -15 degree air (-40 with the windchill) and it turned into vapor and then ice crystals before it hit the ground. I think they took a video that I will try to share later. I know everyone thinks it is always cold in Minnesota, but this weather is unusually cold for us.  This is the coldest is has been in a decade! Hopefully we won’t have another winter like this for a long time, but the kids will certainly remember it.

So, onto the recipe. I’ve been making slow cooker chicken and dumplings for several years now. It was one of the first recipes I shared back in May of 2011: Chicken and Dumplings. After making that recipe countless times, I decided it was time for a kicked up version.
