Double Berry Torte Recipe

I made this red, white and blue, Double Berry Torte as part of a sponsored post for Socialstars, using strawberries and blueberries from the Walmart Produce department.

Double Berry Torte Slice

Summer is the season of fresh fruit and it is something we wait for all year. Of course, you can buy fruit all year long, but once summer comes and the fruits are in season, the flavors are outstanding! This Double Berry Torte is three white cakes layered with strawberries and blueberries in a light, creamy filling. It is perfect for summer celebrations, and since it is red, white and blue, it would be fun to serve on the 4th of July!

Fresh Strawberries

Last week while I was shopping at Walmart, I picked up these delicious, juicy strawberries for my cake. Did you know that Walmart has fresh, farmer picked produce with a 100% money back guarantee? We’ve already eaten so many packages of strawberries this year. We eat them plain and put the in smoothies, desserts and fruit salads.

Fresh Blueberries

There were so many choices of fruit in the Walmart Produce department. Everything from watermelons, to apples to mangos. I also bought a package of fresh blueberries for the torte.

Double Berry Torte Ingredients

To make the Double Berry Torte, start by making the cakes. Mix together a white cake mix and the ingredients called for on the package, for 2 minutes on medium. My package called for egg whites, water and oil. Grease three 9 inch round pans and line the bottom with a circle of parchment. Divide the batter into the three pans. Bake at 350 degrees for about 15 minutes. Allow the cakes to cool for 15 minutes and then flip them over on a cooling rack, peel off the parchment and flip them right side up again to finish cooling.

Next, make the whipped cream. Beat heavy cream and vanilla until peaks form, set in fridge.

To make the strawberry and blueberry cream filling, start by making the cream filling base. Beat softened cream cheese. Add powdered sugar and marshmallow cream, beat well. Set aside.

Puree 1 cup of hulled strawberries in a blender or food processor to make 1/2 cup strawberry puree. Gently fold together 1 cup of the cream filling base, 1 1/3 cups of the whipped cream and 1/2 cup of strawberry puree.

Place one cake round on a cake stand and top it with half of the strawberry cream filling and 1/2 cup of diced strawberries.

Next, make the blueberry cream filling. Puree 1/2 cup of blueberries in a blender or food processor to make 1/4 cup blueberry puree. Gently fold together 1/2 cup of the cream filling base, 2/3 cups of the whipped cream and 1/4 cup of blueberry puree.

Add a cake round and top it with the blueberry cream filling and 1/2 cup of blueberries.

Top with the final cake and half of the strawberry cream filling. Circle the top of the cake with quartered strawberries and put blueberries in the middle.

Store in fridge until ready to serve. The combination of soft white cake, creamy filling and juicy fruit was delicious. This Double Berry Torte is perfect for summer celebrations, barbecues and parties. Since it is a red, white and blue dessert, it would be fun to make for the 4th of July!

Double Berry Torte Recipe

Yield: 12 -16 slices
Prep Time: 45 minutes
Cook Time: 15 minutes
Total Time: 1 hour

Ingredients

Cakes:

  • 1 white cake mix
  • 4 egg whites
  • 1 1/4 cups water
  • 1/3 cup oil

Whipped Cream:

  • 2 cups heavy cream
  • 1 teaspoon vanilla

Cream Filling:

  • 8 oz cream cheese, softened
  • 1 cup marshmallow cream
  • 1 cup powdered sugar
  • 2 16 oz packages strawberries, divided
  • 24 oz package blueberries, divided

Instructions

  1. Mix together cake mix, egg whites, water and oil for 2 minutes on medium speed.
  2. Grease three 9 inch round pans and line the bottom with a circle of parchment. Divide the batter into the three pans.
  3. Bake at 350 degrees for about 15 minutes.
  4. Allow the cakes to cool for 15 minutes and then flip them over on a cooling rack, peel off the parchment and flip them right side up again to finish cooling.

Assembly:

  1. Place one cake round on a cake stand and top it with half of the strawberry cream filling and 1/2 cup of diced strawberries.
  2. Add another cake and top it with the blueberry cream filling and 1/2 cup of blueberries.
  3. Top with the final cake and half of the strawberry cream filling.
  4. Circle the top of the cake with quartered strawberries and put blueberries in the middle.
  5. Store in fridge until ready to serve.
