Cooler weather moves in and I start craving soup! Wild rice soup is one of my many favorites. Unfortunately, no one in my family likes it…or maybe I should say fortunately When I make this soup, I put the extra servings into containers in the freezer for an easy lunch.
Melt butter in a large pan. Saute celery, onion and carrots in the butter until tender crisp. Stir in flour, salt and pepper.
Add chicken broth and milk, continue stirring until thickened.
Add wild rice and chicken and cook until heated through.
Perfect for a cool fall day!
Chicken Wild Rice Soup

3 tablespoons butter
1/2 cup chopped celery
1/2 cup chopped carrots
1/2 medium onion, chopped (or 2 tbsp dried onion)
3 tablespoons flour
Salt & Pepper, to taste
1 1/2 cups chicken broth
2 cups milk
1 cup cooked, cubed chicken (or turkey)
2 cups COOKED wild rice
