This recipe for Nutella S’mores Bars has layers of graham crackers, chocolate, Nutella and toasted marshmallows to celebrate World Nutella Day!

Nutella S'mores Bars Recipe

These bars are inspired by a recipe from one of my aunts for what we call Club Cracker Bars, although I seem to remember them being called Rickety Uncles when I was a kid. I tried searching for a Rickety Uncles recipe and the ones I found are like an oatmeal bar so I’m not exactly sure where that memory came from. Anyway, I decided to combine the club cracker bars with s’mores ingredients and add Nutella to the mix!

Graham Crackers

Line a 9×13 inch pan with foil and grease with cooking spray. Cover the bottom of the pan with about 1 package of graham crackers. Crush 1 cup of the graham crackers. I used about 1 package of the graham crackers.

Hersheys Bars

Combine butter, brown sugar, granulated sugar, evaporated milk, and graham crackers in a saucepan. Bring to a boil and continue boiling for 5 minutes, stirring constantly. Pour the caramel mixture over the crackers in the pan. Break Hershey’s bars into small pieces and place them in the caramel sauce.

Marshmallows

Cover with another layer of about 1 package of graham crackers. Spread the Nutella over the graham crackers. Top with mini marshmallows.

Caramel S'mores Bars

Toast under broiler for about 2 minutes, watching carefully so marshmallows don’t burn.

S'mores Bars

Allow the bars to cool completely before cutting into squares.

Ingredients

  • 1 box graham crackers
  • 1 stick butter

  • 1/2 cup granulated sugar
  • 1/3 cup evaporated milk
  • 3 Hershey's bars
  • 1 cup Nutella
  • 3 cups mini marshmallows

    These bars are excellent, but why do you recommend putting the graham cracker crumbs into the caramel mixture? It turned mine into a sludge that was impossible to tell if it was boiling or not, and I ended up throwing that batch out and making some more caramel without the crumbs. There are graham crackers above and below the caramel anyway, so it’s not like anyone eating the bars would think something was missing.

    Question: can I bathe in that caramel filling and use a toasted marshmallow as a little head pillow? Because OMG, these are outrageous.
