I was recently asked to bring a dessert to a special occasion and I wanted to bring something pumpkin flavored. I found a recipe in a cookbook but the dessert said to make the topping with uncooked eggs whites. So, I decided to do a little research online to see if I could find a similar recipe with different directions. I did indeed find a similar recipe from Taste of Home but while I was checking it out I found an even better looking recipe for Pumpkin Torte. Although I did not create this recipe, I wanted to share this outstanding dessert with you.
Mix together a yellow cake mix, pumpkin, milk, eggs, oil and pumpkin spice.
Pour into 2 greased baking pans and bake at 350°F for 25-30 minutes.
Remove the cakes from the pans after 10 minutes and allow them to cool completely.
Beat a package of cream cheese until light and fluffy.
Add confectioners’ sugar, pumpkin and pumpkin spice. Beat until smooth.
Fold in whipped topping.
Cut the cakes horizontally into two layers. Place one layer on a cake platter and top it with 1/4 of the filling. Repeat this with the final 3 layers.
Drizzle with caramel and sprinkle on toasted pecans.
The only problem I had was figuring out how to transport the dessert to dinner but I certainly didn’t have to worry about transporting any home. The entire dessert was devoured and everyone told me they thought it was fantastic!
