Raspberry Chocolate Magic Cookie Bars are so easy to make! It’s a cake mix crust topped with chocolate raspberry M&M’s and caramelized sweetened condensed milk!
The first official week of summer vacation has been a quiet one. Zack is camping with my in-laws and Christine is typically working or with friends. So, I am hanging out with Vanessa! She had some friends sleepover on Sunday and today we are going to do some shopping. I’ve seen a lot of you talking about how hot it is in your area. You’ve been turning off the oven and opting for cool treats. Here in Minnesota, we’ve been having a cool spring. Yesterday was the warmest day so far this month with a high of 74. I have mixed feelings about it. On one hand, I love having the windows open and the air conditioner off. On the other hand, I am looking forward to going to the lake! Anyway, the cool weather allows me to bake without making our house too hot! I needed to make some desserts to share on Sunday and when I saw the Dark Chocolate Raspberry M&M’s at the grocery store, I knew what I was going to make: Raspberry Chocolate Magic Cookie Bars! They turned out great but there were a lot of suspicious looks and questions from the people trying to choose which dessert they wanted. Since they only got to pick one, they wanted to make sure the one they picked was worth it and these bars were something they had never seen before!
To enhance the raspberry flavor, I mixed a package of raspberry Jello into the cake mix. Plus, it gave the bars a pretty pink color! To make the bars, melt a stick of butter in the microwave. Then, stir in the package of raspberry Jello. Next, add the egg and the cake mix. Pat the dough into a foil lined, greased pan.
Sprinkle the crust with white chocolate chips and dark chocolate raspberry M&M’s. Drizzle sweetened condensed milk over everything and bake for 25-30 minutes. The great thing about making magic bars is that you can add any topping you want from candy to nuts to pretzels and they always turn out great!
