Strawberries and Cream make me think of summer so today I am sharing a strawberry whipped cream recipe to use in these mini strawberry dessert cups.

Strawberries and Cream
Spring has finally arrived in Minnesota seemingly overnight! We went from having a snow day last Thursday to having a high of 78 degrees tomorrow! My tulips grew 6 inches in one week. We are just delighted to be having nice weather and to be thinking about spring and summer. That was my inspiration for this strawberries and cream dessert. Summer is all about delicious fruit and strawberries are at the top of the list! Of course I love eating fresh strawberries but I also love them in strawberry desserts.

Chunks 'O Fruti BarsMy strawberries and cream dessert is made with Chunks ‘O Fruti bars that I found at Sam’s Club. They came in a 16 count box and for added convenience, there are 4 inner boxes so they can fit into the freezer wherever there is space. These 100% natural fruit bars do not have added colors, flavors or high fructose corn syrup. These fruit and water based bars, are verified by the Non-GMO Project. Fruti’s “Fruit First Formulation” means that these fruit bars contain more fruit than any other ingredient and you can see that on the ingredient panel. The Natural Fruit Corporation prides itself in selecting premium fresh fruit from around the world for these bars and use only premium fruit ingredients.

Add Fruti JuiceBeat together heavy whipping cream with vanilla and sugar until soft peaks form. Add one melted, but still cold, strawberry Fruti bar and beat until stiff peaks form.

Strawberry Whipped Cream RecipeThis strawberry whipped cream was so easy to make with the Fruti bars and could be used for any dessert! I think it would be fun to try using the other flavors to make all kinds of whipped cream. Can you imagine Pina Colada whipped cream? Yum!

StrawberriesNext, rinse and dice a few strawberries.

Add Strawberry Whipped CreamPut the strawberry whipped cream in mini phyllo cups.

Strawberry Cream Fruti BarWorking quickly, dice a strawberry cream Fruti bar. It is almost impossible to resist sampling these bars as you work! They are so good! While making this dessert, I was thinking up another easy dessert I could make with these bars like a mini mason jar trifle. It would have diced pound cake soaked in a melted Fruti bar. I would layer the pound cake, fresh fruit, flavored whipped cream and diced Fruti bars in a mini mason jar! Or yogurt could be added to the mason jar too. Yogurt must go well with these bars because there is going to be a Fruti and yogurt demo at Sam’s Club on May 13!

Strawberry and Cream RecipeQuickly serve the dessert before it melts! The Fruti bars were easy to use and added so much flavor to these mini desserts. We tried the bars straight out the package and loved them like that too!

Strawberries and Cream Dessert Cups

Ingredients

  • 1 cup heavy whipping cream
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla
  • 1 Strawberry Fruti bar - melted
  • 1 Strawberry Cream Fruti bar - diced
  • 4 large strawberries - diced
  • 1 package mini phyllo cups

Instructions

Strawberry Whipped Cream:

  1. Working with a cold metal mixing bowl and cold beater, beat heavy whipping cream, sugar and vanilla until soft peaks form.
  2. Add melted (but still cold) strawberry Fruti bar and beat until stiff peaks form.

Strawberries and Cream Dessert Cups:

  1. Put strawberry whipped cream into mini phyllo cups.
  2. Top with diced strawberry cream Fruti bar and diced strawberries.

    Can these be made a little early and put in the freezer so they don’t melt and then add the strawberries just before they are served?
