Taco Casserole is an easy way to make tacos for your family. All of the ingredients are in one casserole dish and is served by the scoopful.

We love eating tacos and this taco casserole is another great way to enjoy one of our favorites. It can be served with extra chips or even soft taco shells if you prefer. Plus, put out small bowls of all of your family’s favorite toppings so they can customize their portion.

Start by browning the ground beef in a large skillet over medium-high heat. Drain the excess grease and return the pan to the stove over low heat.

Add the taco seasoning (find my homemade taco seasoning recipe here) and water. Simmer and stir for a couple of minutes.

Remove the skillet from the heat and stir in the black beans, diced tomatoes with green chilies, and one cup of shredded cheese.

What else can I add to taco casserole?

One of the things I love about this taco casserole is that it is so adaptable. You can add, subtract or substitute ingredients depending on what your family likes or what you have on hand. Here are a few ideas:

  • corn
  • diced peppers
  • cooked pasta
  • cooked rice

Spread the taco casserole mixture in a two quart baking dish. Bake at 375˚F for 15-20 minutes, until bubbly.

Remove the taco casserole from the oven and top with crushed chips and the remaining shredded cheese. Return to the oven for 3-5 minutes, until the cheese is melted.

Remove the taco casserole from the oven and top with shredded lettuce, sliced olives, and pico de gallo (find my recipe here). Serve with additional crushed chips.

What other toppings could I add?

Everyone has their favorite taco toppings so why not serve them all? Try adding sour cream, guacamole, sliced avocado, rice, taco sauce, refried beans, and corn chips.

Taco Casserole

Taco Casserole is an easy way to make tacos for your family. All of the ingredients are in one casserole dish and is served by the scoopful.

Ingredients

  • 1 lb ground beef
  • 1/2 cup water
  • 2 tbsp taco seasoning (find my recipe here or use one packet store-bought)
  • 16 oz black beans, drained and rinsed
  • 15 oz diced tomatoes with chilies (do not drain)
  • 1 1/2 cups shredded Mexican cheese blend, divided
  • 1 cup crushed tortilla chips
  • 1 cup shredded lettuce
  • 1/4 cup sliced olives
  • 1/4 cup pico de gallo (find my recipe here)

Instructions

  1. Preheat oven to 375°F.
  2. Brown the ground beef over medium-high heat and drain the excess grease. Add the water and taco seasoning. Simmer and stir for two minutes.
  3. Remove from the heat. Add diced tomatoes with chilies, black beans, and 1 cup shredded Mexican blend cheese. Stir until combined.
  4. Spread the mixture in a greased 2-quart casserole dish.
  5. Bake at 375˚F for 15-20 minutes, until bubbly.
  6. Remove from oven and top with crushed tortilla chips and the remaining 1/2 cup shredded cheese. Bake3-5 minutes or until cheese is melted.
  7. Top with your favorite taco toppings.

Notes

Additional topping ideas: sour cream, cilantro, avocados, guacamole, refried beans, salsa

    I love their Steak Seasoning! It used to be called Broil Steak but I think it’s just called Steak Seasoning now.

    so many but the ones I just more often are cumin,nutmeg,cinnamon.paprika!
