With Thanksgiving in just a few days away, here are a couple last minute Thanksgiving menu ideas! Our traditional meal includes turkey, ham, potatoes, gravy, stuffing, rolls, green bean casserole, corn and salad. For dessert we have several varieties of pies from pumpkin to pecan. We all help out with the meal by bringing different dishes.
I want to share a couple of delicious Thanksgiving recipes that I made using Country Crock Spread. The first one is a twist on the traditional twice baked potato. My family loves instant mashed potatoes to I came up with Loaded Potato Jars.
Ingredients: instant mashed potatoes, milk, Country Crock Spread, shredded cheese, green onions, sour cream, salt, bacon and pepper.
**Update: I recently learned that Ball mason jars are NOT oven safe, so I recommend only serving the potatoes in the jars for a fun presentation.
Prepare the desired amount of instant mashed potatoes according to the instructions on the package. Stir shredded cheese, sour cream, bacon and pepper into the mashed potatoes. Continue heating until the cheese is melted and the mixture is hot. Spoon the mixture into jars and top with more shredded cheese and bacon. Top with chopped green onions before serving.

do you think the mason jar potatoes could be frozen?
Meredith says
How long will these keep in the fridge? I do salad in a jar for convenience
sake and these would be great too
Tonia says
I would use them within a couple of days to make sure the ingredients stay fresh.
apryl barnes says
i love this idea but what is the purpose of putting it in mason jars?
Tonia says
Hi Apryl,
You are welcome to make them without the jars! They will still taste great! Reasons for the jars? Cuteness, make-ahead and individual servings.
Thanks for stopping by!

Has anyone tried freezing the potato recipe? I’m thinking it would be a great one-serving side dish for a bachelor, etc., but would want to give more than one and have it last awhile.

I have prepared the pumpkin recipe numerous times. This is a ‘perfect’ recipe. I don’t think anyone could mess up this recipe. It’s wonderful for Thanksgiving, especially if you have to carry a dessert to an event. It is also wonderful in the Fall and Winter months, and as one writer said, it does make the house smell so wonderful.

These recipes look so good and easy to make. My son especially makes pumpkin pie so I’ll try this cobbler on him. I know it has my taste buds intrigued. I live in a different universe too 🙂 This is the first time I’ve ever heard of pumpkin cobbler! Looks like an awesome potluck I’ll be taking to church functions! Thanx. Also, this is the first time I’ve come across your sight and will definitely look forward to viewing future blogs.
Tonia says
Thanks Cindy! The cobbler is so good and it makes your kitchen smell amazing when it is baking! I am looking forward to making it again this fall.

The potatoes look intriguing. Can you tell me what type of jars you use? Want to make sure I use the right ones, so as not to make a mess. And definitely gonna try the pumpkin cobbler.
Tonia says
Hi Darlene,
Here are the jars that I used: http://www.freshpreservingstore.com/ball-collection-elite-half-pint-8-oz-wide-mouth-jars-set-of-4/shop/229661/
I bought them at Walmart but you would use another size jars or even use ramekins!
