Make these delicious Carrot Patch Cookie Cups for Easter

Ingredients

- granulated sugar - brown sugar - butter - eggs - vanilla extract - flour - cocoa powder - espresso powder (optional) - baking soda - salt - Oreos, crushed - chocolate buttercream frosting - orange candy wafers - green candy wafers

Beat the brown sugar, granulated sugar, and butter in a mixing bowl.

Add the vanilla extract and egg, and beat until it is light and fluffy.

In another bowl, combine cocoa powder, flour, optional espresso powder, salt, and baking soda.

Add to the contents of your other bowl and mix all until combined. Scrape down the sides of the bowl as needed.

Add balls of cookie dough into a greased silicone mini muffin pan.

Put them in the oven and bake per the instructions in the recipe.

Make indents in the still warm from oven cookies. Allow cookie cups to cool, and remove them from the pan.

Fill the cookie cups with chocolate buttercream frosting.

Sprinkle the crushed Oreos over the frosting or dip the chocolate buttercream-filled cookie cups into the crumbled Oreos.

Melt the orange candy wafers in the microwave. Pipe the orange melted candy wafers onto parchment paper, forming carrot shapes.

Melt the green candy wafers in the microwave. Pipe the melted green candy wafers on top of the hardened carrots to form the tops.

After the candy carrots have solidified, press one into each of the cookie cups.
