Use fresh corn off the cob when in season, or use canned corn when corn on the cob is not available.

To make a lighter version of this corn dip recipe, swap out the full-fat sour cream and mayonnaise for light or fat-free versions.

Want more heat? Add jalapenos, hot sauce, sriracha sauce, or red pepper flakes!

This corn dip can be served hot or cold. To warm the corn dip, just put it in a casserole dish and bake until hot and bubbly.
