Unroll 2 Pillsbury pie crust dough on silicone mat and cut out eight 2 1/2 inch circles from pie crust so that you have a total of 16 circles. I had to knead and re-roll the scraps to get 8 out of each crust.
Place 8 of the cutouts on a silicon baking mat or parchment paper lined baking sheet.
Pile about 8 M&M’s into the center of the cutouts.
Position a lollipop stick so that the top reaches the center of the circle and gently press it into the dough.
Gently flatten the remaining 8 pie crust dough circles so that they are a little bigger.
Place them over the M&M’s.
Use a fork to crimp the edges together.
Brush lightly with a beaten egg white.
Bake at 450 degrees for 10-12 minutes until golden brown.
Melt 2 ounces of vanilla CandiQuik or white chocolate chips.
Frost the pie pops with the vanilla candy coating and top with sprinkles.
