Slow Cooker Pot Roast

My go-to dinner recipe: hands-off Slow Cooker Pot Roast! Total comfort food that is so easy to make in a crock pot.

Ingredients

  • 3-4 pounds beef roast top round or chuck
  • 2 packets zesty Italian dressing mix
  • 1 cup beef broth
  • 2 cups cubed potatoes
  • 2 cup baby carrots
  • Parsley

Pot Roast Gravy:

  • 1 1/2 cups beef drippings/liquid/broth
  • 1/4 cup cold water
  • 2 tablespoons corn starch

Instructions

  • Flip the roast over and sprinkle the other side with another packet of zesty Italian dressing mix.
  • Pour one cup of beef broth into the slow cooker.
  • Surround the roast with cubed potatoes and baby carrots.
  • Cover and cook on low for 6-8 hours.
  • Garnish with parsley.

Pot Roast Gravy:

  • Pour the beef drippings/liquid into a saucepan.
  • In a small bowl, mix together cold water and cornstarch until smooth.
  • Whisk the cornstarch mixture into the saucepan.
  • Bring the gravy to a boil over medium heat, stirring constantly and boil for about 1 minute, until thickened.
