Bloomin' Peach Melba

  • Cut a peach in half around the pit, twist the two halves and separate them. Remove the pit and cut a circle in the flesh, around the hole where the pit was.
  • Flip the peach halves over and cut slits around the peach, leaving the center intact.
  • Place each half in a small, greased baking dish.
  • Mix together sugar and cinnamon.
  • Put butter in the center of the peach halves and sprinkle each half with one teaspoon of cinnamon sugar mixture.
  • Bake at 375˚F for 15-20 minutes or until soft.
  • Remove from the oven, add a scoop of ice cream and drizzle raspberry sauce over it all.

Notes

For a light version, skip the butter and use your favorite sugar alternative mixed with cinnamon. To make a light raspberry sauce, put 1/4 cup of fresh raspberries in a bowl, sprinkle with sugar alternative and microwave for about 30 - 60 seconds until the raspberries break down and are warm.
