Arrange the spring mix lettuce in a large serve bowl or divide it between individual bowls.
Top the lettuce with diced green apples, shaved parmesan, croutons, dried cranberries, and glazed pecans.
Serve with homemade lemon vinaigrette.
One: Cranberry Apple Walnut Salad
Simply swap out the pecans with walnuts. You can even use my glazed pecans recipe to make glazed walnuts.
Two: Chicken Apple Cranberry Salad
Make air fryer chicken breasts or use diced rotisserie chicken. Add the diced chicken to the salad along with the other ingredients.

Store the ingredients separately in airtight containers in the refrigerator and assemble the salad before eating.
