A Chocolate Covered Caramel is the most popular choice in a box of chocolates. Make your own caramel truffles that taste better than store-bought ones!
Put the chocolate chips and one teaspoon of shortening in a small microwave-safe bowl. Microwave on high for 30 seconds and then stir. Continue microwaving on high in 15-second intervals, stirring after each interval, until smooth.
Dip the caramels in the melted chocolate and place on parchment paper or a silicone baking mat.
Allow the chocolate to cool and harden at room temperature.
Put the candy melts (or use white chocolate chips) and 1/4 teaspoon of shortening in a small microwave-safe bowl. Microwave at 50% power for 30 seconds and then stir. Continue microwaving on high in 15-second intervals, stirring after each interval, until smooth.
Drizzle over the chocolate covered caramels.
