Pecan pie bars have a shortbread crust with a pecan pie like topping!

Shortbread Crust

  • Bake at 350˚F. Mix together flour and brown sugar in a bowl. Cut in butter until the mixture is crumbly. Pat into a greased 9-inch pan. Bake at 350˚F for 15-20 minutes.

Pecan Pie Layer

  • Remove from the oven and top with caramel ice cream topping.
  • In a small bowl, whisk together eggs, brown sugar, flour, vanilla, salt and baking soda. Stir in chopped pecans.
  • Bake at 350˚F for 20-25 minutes or until set.
  • Allow the bars to cool and then cut into squares.
