Ingredients

  • 45 Golden Oreos
  • 1/4 cup Musselman's apple butter
  • 4 oz cream cheese softened
  • 24 soft caramels cut in half
  • 12 oz vanilla almond bark 6 squares
  • 1 teaspoon apple pie spice

Instructions

  • Finely crush 45 Golden Oreos. Remove 2 tablespoons and set aside for garnish.
  • Mix the crushed Golden Oreos, softened cream cheese, apple butter, and apple pie spice until well combined.
  • Scoop about one tablespoon of the mixture, add half of a soft caramel, and roll the mixture around the caramel to form a ball.
  • Place the balls on a pan that is covered with parchment paper. Put the rolled truffles in the freezer for about 15 minutes (or in the fridge for 30 minutes) until firm.
  • Melt vanilla almond bark (or candy coating) in the microwave according to the directions on the package.
  • Dip the truffles in the vanilla almond bark. (If the almond bark in the bowl starts to harden, reheat it in the microwave at 10-second intervals.)
  • Set the dipped truffles on a silicon mat or a piece of parchment paper. Sprinkle with crushed vanilla sandwich cookies immediately after placing the truffles on the mat, before the almond bark hardens.

Notes

Caramels:

You want to use SOFT caramels (not chewy) for this recipe. I used Werther's Soft Caramels. If the seasonal caramel apple flavor is available, they are delicious in this recipe.

Storage:

Store the truffles in an airtight container in the fridge for 3-4 days or in the freezer for up to two months.

Apple Shaped:

To make the truffles look like apples, like I did when I made pumpkin Oreo balls, dip them in red candy melts and add a pretzel stick for a stem.

Without Caramels:

You can skip the caramels in the center if you want to. Roll the dough into balls and chill them before you dip them.

Caramel Pumpkin Truffles:

If you prefer pumpkin-flavored desserts, substitute the apple butter with pumpkin puree and the apple pie spice with pumpkin pie spice. Also, since pumpkin puree has a lot of liquid in it, spread it out on several paper towels and then roll it off of the paper towels into a bowl.
