- 4 cups baby field greens
- 2 clementines peeled and segmented
- ½ cup walnuts
- 4 tablespoon dried cranberries
Citrus Salad Dressing
- 6 tablespoon olive oil
- ¼ cup freshly squeezed clementine juice or orange juice
- ¼ cup freshly grated Parmesan
- 2 teaspoons honey
- 1 tablespoon mayonnaise
- ½ teaspoon ground mustard
- ½ teaspoon coarse ground black pepper
- ⅛ teaspoon sea salt
Combine baby field greens, clementines, walnuts, and cranberries in a salad bowl.
Put all of the salad dressing ingredients into a powerful blender or food processor and blend until smooth. Serve with the salad.
