Key Lime Chicken Tenders

These Key Lime Chicken Tenders have a crunchy coating, a light lime flavor and the chicken is tender and moist. They're my family's favorite chicken recipe!

  • Preheat the oven to 400˚F. In a small, wide bowl melt the butter and stir in the key lime juice.
  • In a separate small, wide bowl, mix together panko, breadcrumbs, grated parmesan, garlic powder, salt, pepper, parsley, oregano, and onion powder.
  • Cut boneless, skinless chicken breasts in thirds or fourths.
  • Dip the chicken into the butter and key lime juice mixture.
  • Coat the chicken tenders in the breadcrumb mixture.
  • Place them on a greased baking sheet and bake at 400˚F for 20-25 minutes until cooked through. You can flip the chicken tenders halfway through cooking to help brown both sides.
  • Optional: use a thin, metal spatula/turner to flip the chicken tenders (making sure to scrape up the coating along with the chicken) halfway through cooking to help brown both sides.
  • Cook the chicken tenders under the broiler for a couple of minutes to make the tops more golden brown, if desired.
  • Remove from the oven and sprinkle with a little grated key lime zest for added flavor.
