Ingredients

  • 2 lbs boneless skinless chicken breasts

Cilantro Lime Marinade

  • 1 cup full fat plain Greek yogurt
  • ½ cup lime juice
  • cup minced cilantro
  • 1 teaspoon minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • ½ teaspoon coarse ground black pepper

Cilantro Lime Butter

Instructions

  • Whisk together the Greek yogurt, lime juice, minced cilantro, minced garlic, cumin, salt, and pepper.
  • Coat on both sides of the boneless, skinless chicken breasts. Place in a rimmed dish, cover, and refrigerate for 2-3 hours.
  • Preheat grill or cast-iron skillet grill to medium heat. Lightly grease the grill grates or the skillet.
  • Cook the chicken breasts over medium heat for 12-16 minutes, turning halfway through cooking, or until it reaches an internal temperature of 165˚F.
  • Top with the cilantro-lime butter during the last minute or two of cooking.
