Place the golden Oreos in a food processor and pulse until crumbed.
Mix together the Oreo crumbs, and softened cream cheese. Stir in the orange gel paste food coloring.
Scoop dough using a one tablespoon-sized dough scoop (#60), form into balls, and place on a parchment-lined baking sheet. Place the Oreo balls into the freezer for about 15 minutes to get firm.
Melt the orange candy melting wafers and 2 teaspoons of the shortening in the microwave according to the instructions on the package and stir until smooth. Dip the Oreo balls in the melted candy coating and set them on parchment paper.
Top each one with a pretzel piece.
Once the orange candy coating is set, melt the green candy melts and 1/2 teaspoon of shortening in the microwave and stir until smooth. Put the melted green candy wafers in pastry bags and snip off a tiny bit of the tip. Use the green candy coating to make leaves on the pumpkins.
