Instructions
Put the cottage cheese into a mini food processor or electric food chopper.
Cover and blend until smooth, stopping to scrape down the sides occasionally.
Rest the blended cottage cheese for 10 minutes before using it to make dough.
Store in an airtight container in the fridge for 3-4 days or in the freezer for 1-2 months. Re-blend before using, if necessary.
