Ingredients

beef roast
round or chuck

packets zesty Italian dressing mix

cup
beef broth
2
cups
cubed potatoes
2
cup
baby carrots
1
tablespoon
chopped parsley
optional garnish
Pot Roast Gravy:
1 ½
cups
beef drippings
or beef bouillon/broth
¼
cup
cold water
2
tablespoons
cornstarch
Instructions
Put the roast in a 6-quart slow cooker. Sprinkle with a packet of zesty Italian dressing mix.
Flip the roast over and sprinkle the other side with another packet of zesty Italian dressing mix.
Pour one cup of beef broth into the slow cooker.
Surround the roast with cubed potatoes and baby carrots.
Cover and cook on low for 6-8 hours.
Garnish with parsley.
Pot Roast Gravy
Pour the beef drippings (or use beef bouillon or broth) into a saucepan.
In a small bowl, mix together cold water and cornstarch until smooth.
Whisk the cornstarch mixture into the saucepan.
Bring the gravy to a boil over medium heat, stirring constantly and boil for about 1 minute, until thickened.

Store cooled leftovers in an airtight container in the fridge for 3-4 days or in the freezer for up to four weeks.
