Ingredients

  • 6 large eggs
  • ½ cup sour cream
  • ½ cup heavy cream
  • 1 teaspoon minced onions
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup shredded cheddar cheese
  • ½ cup thinly sliced peppers
  • ½ cup cooked, crumbled bacon

Instructions

  • Preheat the oven to 400˚F. Whisk together the eggs, sour cream, heavy cream, salt, pepper, and minced onions.
  • Pour the egg mixture into a greased 12-inch cast iron skillet or casserole dish.
  • Top with shredded cheddar cheese, sliced peppers, and crumbled bacon.
  • Bake at 400˚F for 30-35 minutes until a knife inserted in the center comes out clean.

Notes

Allow the leftovers to cool, and then transfer them to an airtight container. Store in the fridge for 2-3 days.
