Ingredients

  • 5 eggs
  • 5 tablespoon mayonnaise
  • 3 tablespoon diced dill pickles
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 10 slices bread
  • 5 large pieces romaine lettuce
  • 10 slices tomato

Instructions

Hard Boiled Eggs

  • Put the eggs in a pan and add enough cold water to cover the eggs by an inch.
  • Cover the pan and bring to a boil over medium-high heat.
  • Remove from the heat, leave the cover on and allow the eggs to cook in the hot water for 12-15 minutes.
  • Immediately cool the eggs with cold water.

Egg Salad Sandwiches

  • Peel and rinse the hard-boiled eggs. Cut the eggs into slices and place them in a small bowl. Add mayonnaise, diced pickles, salt, and pepper. Use a fork to mash up the eggs and mix everything together.
  • Layer lettuce, tomatoes, and egg salad on a slice of your favorite bread. Top with a second slice of bread.
