Preheat the oven to 400˚F. Cut one head of cauliflower into large pieces.
Toss with olive oil.
Put cauliflower florets in a pan lined with parchment paper.
Sprinkle with 1/2 tablespoon of powdered ranch, dill weed, salt, pepper and garlic. Stir to coat.
Sprinkle with an additional 1/2 tablespoon of powdered ranch.
Bake for 15 minutes at 400˚F.
Remove from oven, spray with olive oil cooking spray, and sprinkle with final 1/2 tablespoon of powdered ranch.
Bake for an additional 45 minutes, stirring every 15 minutes.
Notes
Buffalo Cauliflower Bites: Coat the roasted cauliflower in buffalo sauce before serving.
Parmesan Roasted Cauliflower: Remove the cauliflower bites from the oven 15 minutes before they are done and sprinkle them with grated parmesan. Return them to the oven to finish baking.
