Cilantro Lime Cauliflower Rice

This Microwave Cilantro Lime Cauliflower Rice Recipe is an easy side dish to serve for dinner. Try it with stir fry or kabobs!

Ingredients

  • 1 head cauliflower
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 2 tablespoon water
  • 1 clove garlic minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup cilantro chopped
  • 2 tablespoon butter

Instructions

  • Cut the stem off a head of cauliflower and break the rest into florets.
  • Process half of the florets in a food processor until it looks like grains of rice. Then, do the second half.
  • Put the riced cauliflower into a microwave safe casserole dish and drizzle with a mixture of olive oil, water, lime juice, minced garlic, salt and pepper. Stir to coat the cauliflower.
  • Cover tightly with plastic wrap and microwave for 5-7 minutes.
  • Stir in chopped cilantro.
  • Taste the cilantro lime cauliflower rice and add butter, additional lime juice, salt and pepper, if needed.
