    Cilantro Lime Cauliflower Rice

    This Microwave Cilantro Lime Cauliflower Rice recipe is an easy side dish to serve with stir fry or kabobs! Or add it to a casserole!

    Rice is a popular side dish for so many meals, and it is also included in many main dishes as well! We love using riced cauliflower to make fried rice and adding it to stuffed peppers.

    Tonia’s Notes

    I’m unsure where I’ve been, but I just learned about cauliflower rice, also known as riced cauliflower. It’s all over the internet, and even Trader Joe’s sells it. I’ve been trying to eat more fruits and vegetables, so it’s the perfect time for me to try making cilantro lime cauliflower rice.

    How To Make

    Step one button.

    Cauliflower

    Cut the stem off a head of cleaned cauliflower and break the rest into florets. Place half of the florets in a food processor.

    Process

    Process half of the florets in a food processor until they look like grains of rice. Then, do the second half. Or, if you prefer, you can mince the cauliflower by hand, but it will take much longer.

    Flavoring

    Put the riced cauliflower into a microwave-safe casserole dish and drizzle with a mixture of olive oil, water, lime juice, minced garlic, salt, and pepper. Stir to coat the cauliflower. Cover tightly with plastic wrap and microwave for 5-7 minutes.

    Then, stir in chopped cilantro. Taste the cilantro lime cauliflower rice and add butter, additional lime juice, salt, and pepper, if needed.

    Recipe Tips

    Here are a few of our favorite tips for this recipe that we’ve developed from making it countless times for our family. And here are some storage tips as well.

    • Ricing: If you do not have a food processor, chop the cauliflower into rice-sized pieces using a cutting board and sharp knife. Or you can use a grater to grate the cauliflower into little bits.
    • Stovetop: You can cook the cauliflower rice in a saute pan with a tablespoon of olive oil if you don’t want to use the microwave. This is also a great way to make the rice crispier.
    • Make Ahead: You can make it ahead of time and reheat it as needed.
    • Refrigerator: Store the leftovers in an airtight container in the fridge for 3-4 days.
    • Freezer: You can freeze the leftovers for 1-2 months.
    • Reheat: The leftovers can be reheated in the microwave or on the stovetop.

    Ingredients

    • 1 head cauliflower
    • 1 tablespoon olive oil

    • 1 clove garlic minced
    • ¼ teaspoon salt
