Put the oats, brown sugar, baking powder, cinnamon, and salt in a large bowl and stir to combine.
In a separate bowl, whisk together the milk, applesauce, eggs, and vanilla extract. Add to the dry ingredients and stir to combine.
Pour into a greased 9x13 baking dish.
Bake at 350˚F for 28-32 minutes, until set.
