Cut a peach in half around the pit, twist the two halves and separate them. Remove the pit and cut a circle in the flesh, around the hole where the pit was.
Flip the peach halves over and cut slits around the peach, leaving the center intact.
Place each half in a small, greased baking dish.
Mix together sugar and cinnamon.
Put butter in the center of the peach halves and sprinkle each half with one teaspoon of cinnamon sugar mixture.
Bake at 375˚F for 15-20 minutes or until soft.
Remove from the oven, add a scoop of ice cream and drizzle raspberry sauce over it all.
Notes
For a light version, skip the butter and use your favorite sugar alternative mixed with cinnamon. To make a light raspberry sauce, put 1/4 cup of fresh raspberries in a bowl, sprinkle with sugar alternative and microwave for about 30 - 60 seconds until the raspberries break down and are warm.
