Preheat the oven to 425˚F. Process the cottage cheese in a food processor until smooth. Let it rest for 10 minutes.
Combine the flour, baking powder, and salt in a bowl. Add the blended cottage cheese and mix until a dough forms.
Transfer the dough to a floured surface, gather it into a ball, and rest for 10-15 minutes. Flatten the dough into a rectangle and transfer it to a parchment-lined baking sheet. Bake at 425˚F for 10-14 minutes.
While baking, combine the grated Parmesan, garlic powder, dried oregano, and dried basil in a small bowl. Set aside. Remove the cheese bread from the oven and brush with melted butter. Sprinkle with the Parmesan mixture and top with shredded cheese.
Bake at 425˚F for 5-8 minutes. Cut into slices.
