This garlic cheese bread has a secret ingredient: cottage cheese! It’s blended smooth and mixed into the dough for an easy, no-yeast recipe that’s quick, flavorful, and popular with the whole family. It’s similar to my cottage cheese pizza dough, and you can even add pizza toppings if you want!

Is there anything better than soft bread topped with garlic butter and cheese?!! I could happily eat it instead of pizza as a meal. We tested this cottage cheese cheesy bread so many times (lucky us, since they were all delicious) using different pans, seasonings, and toppings. The winning recipe is cooking the bread on a baking sheet.
For the cheese, I love the results with a Mexican 4 cheese blend of Monterey Jack, cheddar, queso quesadilla, and asadero. It is flavorful, it melts really well, and browns nicely. That being said, you can substitute it with your favorite shredded cheese.

How To Make Cottage Cheese Cheesy Bread

Cottage Cheese
Start by blending the cottage cheese in a mini food processor until it is smooth. Let the blended cottage cheese rest for about 10 minutes.
You can use a blender or a full-size food processor, but it is harder to get it smooth due to the small amount of cottage cheese. See my post about blended cottage cheese for more information.


Four-Ingredient Dough
Combine the all-purpose flour, baking powder, and kosher salt in a bowl. Add the blended cottage cheese and stir until a rough dough forms.


Par-Bake
Transfer the dough to a floured surface, gather it into a ball, and rest for 10-15 minutes. Flatten the dough into a rectangle and transfer it to a parchment-lined baking sheet. Bake at 425˚F for 10-14 minutes.


Cheese Bread Toppings
While baking, combine the grated Parmesan, garlic powder, dried oregano, and dried basil in a small bowl. Set aside. Remove the cheese bread from the oven and brush with melted butter. Sprinkle with the Parmesan mixture and top with shredded cheese.


Bake and Slice
Bake at 425˚F for 5-8 minutes. Cut into slices and dip it in my garlic butter sauce or one of the pizza dipping sauces.


Recipe Tips
- Make Ahead: You can make the dough ahead of time, wrap it in plastic wrap, and store it in the fridge overnight. Remove it from the fridge and let it sit at room temperature for 20-30 minutes before rolling it out.
- Storage: Store leftovers in an airtight container in the fridge for 2-3 days or in the freezer for up to a month.
- Reheat: You can reheat cottage cheese garlic cheese bread in the oven, air fryer, or microwave.
- Pizza: You can easily turn this into a deep-dish pizza by adding pizza sauce and toppings after par-baking the crust.
