These cottage cheese crackers are crispy, flavorful, and totally customizable! Just add blended cottage cheese and your favorite seasonings to the dough.
Preheat the oven to 400˚F. Blend the cottage cheese in a high-speed blender or small food processor until smooth. Let it rest for 10 minutes.
Combine the flour, baking powder, dried rosemary, garlic powder, onion powder, kosher salt, and coarse-ground black pepper. Add the blended cottage cheese and mix until a dough forms.
Transfer the dough to a floured surface, shape into a ball, cover, and rest for 15 minutes. Then, cut into four pieces.
Roll one piece of the dough out as thin as you can, about 9x12 inches. Transfer it to a parchment-covered baking sheet. Spray with olive oil spray, sprinkle with 1/4 teaspoon of sea salt, and cut into squares, rectangles, or triangles with a pizza cutter.
Bake at 400°F for 8-9 minutes. Remove from the oven, separate any crackers if necessary, remove any that are browned, and flip the rest over. Continue baking the crackers for an additional 5-7 minutes, checking after each minute to remove any browned ones until they are all crispy.
Repeat with the remaining dough.
