Tonia’s Notes
I love snacking on crackers, and when I saw that an Italian restaurant in Minneapolis serves crackers with ricotta cheese dip, I had to try it. I added some hot honey, rosemary, and oregano on top, and it was delicious!
But as I was enjoying the cottage cheese crackers, they reminded me of pita crackers, and years ago, my sister had me try pita chips with whipped cream cheese. So I tried that next with these homemade crackers, and it was just as good!

How To Make Cottage Cheese Crackers

Cottage Cheese
Blend the cottage cheese in a high-speed blender or small food processor until smooth. Let it rest for 10 minutes.

Cracker Dough
Combine the flour, baking powder, dried rosemary, garlic powder, onion powder, kosher salt, and coarse-ground black pepper. Add the blended cottage cheese and mix until a dough forms.
Transfer the dough to a floured surface, shape into a ball, cover, and rest for 15 minutes. Then, cut into four pieces. Roll one piece of the dough out as thin as you can, about 9×12 inches.

Season and Slice
Transfer the dough to a parchment-covered baking sheet. Spray with olive oil, sprinkle with 1/4 teaspoon of sea salt, and cut into squares, rectangles, or triangles with a pizza cutter.

Bake and Repeat
Bake at 400°F for 8-9 minutes. Remove from the oven, separate crackers if necessary, remove any that are browned, and flip the rest over. Continue baking for an additional 5-7 minutes, checking after each minute to remove any browned crackers until they are all crispy.

Recipe Tips
- Seasonings: I added several seasonings in this recipe, but the flavor combinations are endless. Here are a few more to try: everything bagel seasoning, garlic powder and dried chives, rosemary and sea salt, ranch seasoning, garlic parmesan, and buffalo seasoning.
- Storage: Store the cottage cheese crackers in an airtight container at room temperature for 4-5 days.
- Ricotta Dip: Beat 1 cup of whole milk ricotta with 3 tablespoons of heavy cream. Top with 2 tablespoons of hot honey, 1/2 teaspoon rosemary, and 1/2 teaspoon oregano.
- Cream Cheese Dip: Put 1 cup of whipped cream cheese in a bowl and drizzle with 2 tablespoons of hot honey.
