This easy cottage cheese flatbread is made with only four ingredients! Top it with garlic butter and sea salt for a side, or add pizza sauce, pepperoni, and cheese for a meal.
Start by blending the cottage cheese until smooth, then let it rest for 10 minutes.
Combine all-purpose flour, baking powder, and salt in a bowl, then add the blended cottage cheese. Stir until a rough dough forms.
Turn the dough out on a floured surface and form it into a ball. Cover and let it rest for 10 minutes. Cut the ball of dough into six pieces. Roll each piece out into a circle about 8 inches wide.
Heat a cast iron skillet over medium to medium-high heat. Lightly brush the pan with olive oil and add one of the dough circles. Cook for 30-60 seconds until browned, then flip and cook the other side for about 30 seconds. Repeat with the remaining dough, lightly greasing the pan each time.
