    Chocolate Ooey Gooey Bars

    A recipe for Chocolate Ooey Gooey Bars that everyone will love with brownies on the bottom, marshmallow cream in the middle and Cocoa Pebbles Bars on top.

    Chocolate Ooey Gooey Brownies

    Spring break and the Easter holiday are over. I hope you had a wonderful vacation. It was nice to have some time off of work and school but since we had to get back to the real world, I knew that something chocolate would make the transition a little easier!

    If you like your bars to be nice, clean cut squares that look pretty on a platter, then this recipe isn’t for you. But if you are all about the ooey gooey goodness when it comes to chocolate desserts, then you have to try making these bars!

    Marshmallow Cream Layer

    Start by making an 8×8 inch pan of brownies. You can use store bought or homemade brownies. (I used Betty Crocker Supreme Triple Chunk.) Remove the brownies from the oven and put spoonfuls of the marshmallow cream on top. Allow the marshmallow cream to heat and spread out on its own.

    Chocolate Rice Krispies Layer

    For the top layer, microwave butter for 20 seconds in a large bowl, until melted. Add mini marshmallows and stir to coat. Microwave for 45 seconds and stir until smooth. (If the marshmallows aren’t completely melted, microwave for an additional 30 seconds.) 

    Mix in chocolate crispy rice cereal. (I used Cocoa Pebbles.) Carefully spread the marshmallow cream out evenly.

    Then, drop the chocolate crispy rice mixture by large spoonfuls over the marshmallow cream layer and carefully spread out evenly. I put my hand in plastic baggie with a little butter on it and gently spread it out and patted it down.

    Allow the bars to cool and set before cutting them into squares.

    These Chocolate Ooey Gooey Bars spread once they are cut, so you might want to wait to cut them until right before serving.

    Ooey Gooey Bars are a favorite for kids of all ages. Zack is the biggest fan of ooey gooey bars and while enjoying these bars, he said “It’s like ooey gooey bars and brownies got married and had a baby!”

    Ingredients

    Brownie Layer

    • 17.8 oz brownie mix
    • ⅓ cup vegetable oil
    • ¼ cup water
    • 1 large egg

    Marshmallow Layer

    • 7 oz container marshmallow cream

    Chocolate Rice Krispies Treats Layers

    • 1 ½ tablespoons butter
    • 3 cups mini marshmallows
    • 3 cups Cocoa Pebbles chocolate crispy rice cereal

    Instructions

    Brownie Layers

    • Preheat the oven to 350˚F. Grease the bottom only of an 8x8-inch pan.
    • Stir together the brownie mix, oil, water, and egg until well blended.
    • Spread in the pan and bake at 350˚F for 33-38 minutes.

    Marshmallow Layer

    • Remove the brownies from the oven and put spoonfuls of the marshmallow cream on top while still hot.
    • Allow the marshmallow cream to heat and spread out on its own.

    • Melt the butter in a large bowl in the microwave.
    • Add mini marshmallows and stir to coat.
    • Microwave for 45 seconds and stir until smooth. (If the marshmallows aren’t completely melted, microwave for an additional 30 seconds.)
    • Mix in chocolate crispy rice cereal.
