    White Chocolate Covered Strawberries

Chocolate covered strawberries are so easy to make that a recipe really isn’t necessary. I made white chocolate hand dipped strawberries for my sister’s wedding and I am going to share how to make them in time for Valentine’s Day!

Since I made these chocolate covered strawberries for a summer wedding, I didn’t have a problem finding ripe, juicy strawberries. Now that it is winter, just try to find the best ones you can. Wash the strawberries, dry them well and let them come to room temperature.

    Strawberry Dipped In Chocolate

Melt together 1 cup white chocolate chips and 1 tablespoons of shortening in a double boiler. Here is my fancy double boiler. It is a shallow, glass bowl over a pot with a little simmering water in it.

    Dip Strawberry In White Chocolate

Insert a toothpick in the top of the strawberry and double check that it is dry. Holding onto the toothpick, twirl the strawberry in the melted chocolate.

Allow any excess chocolate to drip off of the strawberry. Gently tap on the arm that is holding the strawberry, with the opposite hand, to help get the chocolate to drip. You don’t want to shake the chocolate covered strawberry too much because it will slide right off the toothpick!

Line the dipped strawberries on a piece of waxed paper. In this picture, you can tell that the first coat of chocolate doesn’t give good enough coverage. You can still see the seeds. So, after the first chocolate coating hardens, dip the strawberries into the chocolate again. The chocolate will need to be softened again before the second dipping. Melt together more chocolate and shortening, if needed.

Put the strawberries back on the waxed paper and allow the white chocolate to harden before moving them to a serving platter. These are best enjoyed immediately so leave yourself a little extra time on Valentine’s Day to make them!

I used corn on the cob holders instead of toothpicks! Much easier and sturdier to handle the dipping process.

Thanks Ashley! I’ve never tried using vegetable oil, but I’ve heard that you can! Just don’t add too much or the chocolate will not harden again.

Such a great idea! I’m on my way to pick ours up from the store this evening and, honestly, making them at home would have been much less hassle! Yours look so beautiful too.

We make chocolate covered strawberries for Valentine’s Day every year because they’re our favorite! This year we’ll have to thrown in some white chocolate!
