
Yesterday I was told you about the clearance deals I picked up at Target and promised to show you the cookies I made with my 50 cent sugar cookie mix and 90% off peppermint frosting. I made these cute little sandwich cookies. They are reminiscent of one of my favorite Christmas cookies, that I didn’t have time to make this year, minty cream wafers.

I mixed up the cookie dough like the directions said and added Red (No-Taste) Icing Color until it was the color I wanted.

The dough was pretty thick so I had to use my hands to knead the dough until the color was even.

I rolled small balls of dough with my hands and baked per the instructions on the box.

Luckily they came out pretty uniform in size.

After letting them cool, I spread peppermint frosting on one cookie and topped with a second cookie. I matched them up according to size before frosting them. Then, I sprinkled the frosting with Shimmer Silver Cupcake Gems from CakeMate.
I have 2 boxes of sugar cookie dough left and I am trying to figure out what to make with them because I need to bring cookies to church on Sunday! I will try to post my second batch of clearance cookies next week.

I always love when you make something delicious that was a total bargain! I bought some Betty Crocker cookie mix last year after Christmas for 10 cents a bag, and I did all kinds of stuff with it. It was a fun challenge to see just how far I could take it!
