{Thanksgiving} Loaded Potato Jars & Pumpkin Cobbler

With Thanksgiving in just a few days away, here are a couple last minute Thanksgiving menu ideas! Our traditional meal includes turkey, ham, potatoes, gravy, stuffing, rolls, green bean casserole, corn and salad. For dessert we have several varieties of pies from pumpkin to pecan. We all help out with the meal by bringing different dishes. I want to share a couple of delicious Thanksgiving recipes that I made using Country Crock Spread. The first one is a twist on the traditional twice baked potato. My family loves instant mashed potatoes to I came up with Loaded Potato Jars.

Ingredients: instant mashed potatoes, milk, Country Crock Spread, shredded cheese, green onions, sour cream, salt, bacon and pepper.
Prepare the desired amount of instant mashed potatoes according to the instructions on the package. Stir shredded cheese, sour cream, bacon and pepper into the mashed potatoes. Spoon the mixture into jars and top with more shredded cheese and bacon. Place the jars on a cookie sheet and bake at 350°F for about 8 minutes or until the cheese has melted and the potatoes are heated through. Top with chopped green onions before serving.

These loaded potato jars could be prepared ahead of time and heated just before serving.
The second recipe is for Pumpkin Cobbler. I’m not sure what universe I’ve been living on but it seems like everyone except me already knows about pumpkin cobbler. I tried it for the first time this fall and fell in love!
Ingredients: sugar, cinnamon, white cake mix, vanilla, eggs, ginger, evaporated milk, Country Crock Spread, pumpkin and brown sugar (not pictured).
Beat the eggs slightly and then add the pumpkin, evaporated milk, sugar, cinnamon, ginger and vanilla. Pour the mixture into a greased 9×13 inch pan. Top with the powdered cake mix and sprinkle with brown sugar. Drizzle melted Country Crock Spread evenly over the top. Bake at 350°F for about 1 hour or until golden brown. Serve with vanilla ice cream and caramel drizzle.

Loaded Potato Jars

Instant mashed potato flakes
Milk
Country Crock Spread
Shredded cheese
Green onions
Sour cream
Bacon bits
Salt
Pepper

Spoon the mixture into oven safe jars or ramekins and top with more shredded cheese and bacon. Place the jars on a cookie sheet and bake at 350°F for about 8 minutes or until the cheese has melted and the potatoes are heated through. Top with chopped green onions before serving.
Pumpkin Cobbler

3 eggs
Large can of pumpkin (29 oz)
12 oz evaporated milk
1 cup granulated sugar
1/4 cup brown sugar
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
1 tsp vanilla
White Cake Mix
4 tbsp brown sugar
3/4 cup melted Country Crock Spread
Vanilla Ice Cream (optional)
Caramel (optional)
Beat the eggs slightly. Add the pumpkin, evaporated milk, sugars, cinnamon, ginger, salt and vanilla. Pour the mixture into a greased 9×13 inch pan. Top with the powdered cake mix and sprinkle with brown sugar. Drizzle melted Country Crock Spread evenly over the top. Bake at 350°F for about 1 hour or until golden brown. Serve with vanilla ice cream and caramel.
