Ooey Gooey Orange Creamsicle Bars have a light orange flavor and a lot of oozing, creamy goodness! The classic taste of orange cream is perfect for summer.
Orange Creamsicle makes me think about summer. On the way to school this morning, we realized that there are only 5 weeks of school left. It feels like we were just talking about back-to-school! So, when trying to think of a recipe for Cathy’s baby shower, I decided to make something with an orange creamsicle flavor. After making two pans of Funfetti Ooey Gooey Bars for our Easter dinner, I knew that I had to make Ooey Gooey Orange Creamsicle Bars!
One of my blogging friends, Cathy from Lemon Tree Dwelling, is going to be having a baby girl soon. Congratulations Cathy, we are all so excited for you and looking forward to seeing pictures of your darling baby girl! If you aren’t already familiar with Cathy’s blog, you’ve got to head over there to check it out! We decided to have an online, surprise baby shower for Cathy. My contribution is these Ooey Gooey Orange Creamsicle Bars.
The bottom layer of the bars is like a cake mix cookie. I used an 8.5 ounce Funfetti Orange All Star cake mix. This cake mix is HALF the size of the standard cake mixes. If you can’t find an orange cake mix, use a white cake mix, divide in half and add orange food coloring to the batter.
To make the first layer, mix together one 8.5 ounce orange cake mix, egg, orange extract and oil. Press into a greased 9×9″ pan. Bake at 350 degrees for 10-12 minutes.
For the second layer, slowly spread a 7 ounce container of marshmallow cream over the first, still warm, layer.
For the top layer, make orange Rice Krispie treats. Microwave 1 1/2 tablespoons of butter for 20 seconds in a large bowl, until melted. Add 3 cups of mini marshmallows and stir to coat. Microwave for 45 seconds and stir until smooth. (If the marshmallows aren’t completely melted, microwave for an additional 30 seconds.) Add orange food coloring and orange extract. Stir until the color is even.
Mix in 3 cups of Rice Krispies. Drop by large spoonfuls over the marshmallow cream layer and carefully spread out evenly. I put my hand in plastic baggie with a little butter on it and gently spread it out and patted it down.
Allow the bars to cool and set before cutting into pieces.
