Strawberry Ooey Gooey Bars have a strawberry cake mix crust with marshmallow cream and fruity pebbles treats on top. They are irresistible to kids of all ages!

    Strawberry Ooey Gooey Bars

Ooey gooey bars continue to be my son’s NUMBER ONE FAVORITE dessert recipe on my blog. He wants them for every holiday and prefers them over cake for his birthday! I  made them to bring to a family celebration recently, and my newest brother-in-law had his first opportunity to try them and now he loves them as much as Zack does!

He was “selling” them to everyone as they were getting their desserts from the dessert table. So, with another holiday and season coming soon, I decided it was time for a new version. These Strawberry Ooey Gooey Bars are perfect for spring and you can cut them into egg shapes for Easter!

    How To Make

    marshmallow layer

First, make the cake mix crust. Mix together a strawberry cake mix, vegetable oil, and eggs. Press into a greased 9×13-inch pan and bake at 350˚F for 10-13 minutes. Remove from the oven and top with marshmallow cream.

As the marshmallow cream warms, it will start to spread. Carefully spread it out over the cake mix crust, pressing on the top of the marshmallow cream with a greased spatula.

    Fruity Pebbles Treats on top

Next, make the fruity pebbles treats layer. In a large bowl, melt butter in the microwave. Add mini marshmallows and stir to coat. Microwave for 45 seconds and stir until smooth. (If the marshmallows aren’t completely melted, microwave for an additional 30 seconds.)

Add the Fruity Pebbles and gently stir until well coated. Drop by large spoonfuls over the marshmallow cream layer and carefully spread out evenly using a greased spatula. Finally, firmly press the top layer down into the marshmallow cream to really hold things together. Cover the bars and place in the fridge to cool and harden.

    cut out egg shape

After you cut the bars into squares, you can use a cookie cutter to cut shapes like these Easter eggs.

My husband brought a platter of these to work with him and he said they were a hit. Hello to all my new readers that have gotten to know my husband Brian. He loves working with all of you and I am thankful for your support!

Fruity pebbles already have a great fruity flavor, so the strawberry cake mix layer of these strawberry ooey gooey bars really adds to that. The double marshmallows with marshmallow cream and mini marshmallows makes for the ultimate ooey gooey experience!
