    Blueberry Salsa

    Make our Blueberry Salsa recipe for summer celebrations. Serve this patriotic, red, white, and blue appetizer with blue corn tortilla chips.

    Blueberry pico de gallo includes fresh ingredients like blueberries, peppers, cucumbers, and onions. Use it as an appetizer or serve it with tacos, nachos, and burritos!

    Tonia’s Notes

    We already blew past Memorial Day, and the 4th of July is right around the corner! I wanted to make an appetizer that you can enjoy all summer long, but that is perfect for patriotic celebrations.

    I spotted some blue corn tortilla chips in the grocery store and knew that they would be delicious with blueberry salsa. My test batches of this recipe got rave reviews. Everyone was surprised to find blueberries in the salsa and said they loved the combination of flavors.

    How To Make Blueberry Salsa

    Prep Ingredients

    Rinse, chop, peel, and dice the ingredients as needed. You can leave the skin on the cucumber if you prefer, but I wanted more white ingredients, so I chose to peel mine.

    Combine

    Put all the ingredients in a medium-sized bowl and stir to combine. You can add a little more or less of any of the ingredients, but if you change it too much, the flavor combination will also change.

    Chill

    Cover the bowl and place it in the refrigerator for at least one to two hours before serving. This will help the flavors come together.

    Recipe Tips

    • Make Ahead: You can make blueberry salsa the day before you plan to serve it.
    • Refrigerator: Store it in an airtight container in the fridge for 3-5 days.
    • Serving: Serve the red, white, and blue salsa with blue corn tortilla chips. Line the tray or bowl with a checked deli basket liner in a contrasting color.

    Ingredients

    • 1 ½ cups blueberries roughly chopped
    • ½ cup diced Roma tomatoes
    • ½ cup diced red bell pepper
    • ½ cup peeled, diced English seedless cucumber
    • ⅓ cup diced yellow onion
    • ¼ cup chopped cilantro
    • 2 tablespoon lime juice
    • 1 clove garlic minced
    • ¼ teaspoon sea salt
    • ¼ teaspoon coarse ground black pepper

    Instructions

    • Put the blueberries, tomatoes, red bell peppers, cucumbers, onions, cilantro, lime juice, garlic, salt, and pepper in a bowl. Stir to combine.
    • Cover and refrigerate for 1-2 hours before serving for the best flavor.

    Notes
